Growing up in Missoura, beans were often considered part of a poor man's food group. I loved them but my father not so much.
Soak a cup of beans overnight. Then rinse and dump in a slow cooker. Cover the beans with about 1" of water. Add chopped onions, peppers, bacon bits and ham. Salt, pepper, whatever.
Cook on High until the beans are soft. Mash a few beans for a thicker soup.
Freezing leftovers is fine.
For some odd reason, beans are not a favorite food here in Thailand.
